Description

Tender roasted sweet potatoes topped with creamy feta and drizzled with honey—this simple appetizer is packed with flavor and perfect for any occasion.

Ingredients

→ Main Ingredients

2 medium sweet potatoes, peeled and sliced into ½-inch thick rounds

2 tablespoons olive oil

½ teaspoon salt

¼ teaspoon black pepper

→ Toppings

4 ounces feta cheese, crumbled

2 tablespoons honey

1 tablespoon fresh thyme leaves, chopped (optional)

1 tablespoon balsamic glaze (optional)

¼ cup chopped walnuts or pecans (optional)

Instructions

Prep Sweet Potatoes: Peel sweet potatoes and slice into ½-inch rounds.

Season: Toss rounds in olive oil, salt, and black pepper until evenly coated.

Preheat Oven: Set oven to 400°F (200°C). Line a baking sheet with parchment paper.

Roast: Arrange rounds in a single layer and roast for 20–25 minutes, flipping halfway, until tender and lightly browned.

Cool Slightly: Let rounds rest for a few minutes after roasting.

Add Toppings: Top each round with crumbled feta, drizzle with honey, and add optional thyme and nuts.

Optional Glaze: Drizzle with balsamic glaze for extra flavor.

Serve: Serve warm as an appetizer, snack, or side dish.

Notes

Use goat cheese, ricotta, or Parmesan instead of feta.

Replace honey with maple syrup or agave for a different sweetness.

Add red pepper flakes for heat or rosemary for a woodsy note.

Try with purple or white sweet potatoes for color variation.

Make it a meal by topping with grilled chicken, chickpeas, or a fried egg.

Air fryer option: Cook at 375°F (190°C) for 10–12 minutes, flipping once.
