These honey garlic roasted carrots are tender, caramelized, and packed with sweet-savory flavor—an easy and elegant veggie side for any meal.
Ingredients
1 lb carrots, peeled and cut into 1″ sticks
2 Tbsp olive oil
2 Tbsp unsalted butter, melted
3 cloves garlic, minced
2 Tbsp honey
Salt and pepper, to taste
Fresh parsley or thyme (optional, for garnish)
Instructions
Preheat Oven: 400°F (200°C). Line a baking sheet.
Prep Carrots: Peel and cut carrots into 1″ sticks; aim for uniform pieces.
Make Glaze: Whisk olive oil, melted butter, garlic, honey, salt, and pepper in a small bowl.
Coat & Roast: Toss carrots with glaze in a single layer on the sheet. Roast 20–25 minutes, tossing halfway, until tender and slightly caramelized.
Serve: Sprinkle with parsley or thyme if desired and serve immediately.
Notes
Add a spicy twist with red pepper flakes or sriracha.
Make it vegan by replacing butter with vegan butter or extra olive oil.
Toss in other root veggies—parsnips, sweet potatoes, or beets—for variety.
Add chopped nuts like pecans or walnuts in the last 5 minutes for crunch.
