Description

A refreshing no-cook salad with crisp apples, crunchy broccoli, and a creamy tangy dressing—perfect for fall lunches or healthy sides.


Ingredients

2 Honeycrisp apples, diced

3 cups broccoli florets, chopped

½ cup raisins or dried cranberries

½ cup sunflower seeds or walnuts

⅓ cup Greek yogurt

2 tbsp mayonnaise

1 tbsp apple cider vinegar

1 tbsp honey

¼ tsp salt

¼ tsp black pepper


Instructions

Dice the apples and chop the broccoli into bite-sized pieces.

In a small bowl, whisk together Greek yogurt, mayonnaise, apple cider vinegar, honey, salt, and pepper.

In a large bowl, combine apples, broccoli, raisins/cranberries, and seeds/nuts.

Pour dressing over the salad and toss until well coated.

Chill for 30 minutes before serving or serve immediately.

(Optional) Add shredded cheddar or bacon bits for extra flavor.

Notes

Substitute pears for apples or sour cream for yogurt if desired.

Toss apples with lemon juice to prevent browning if prepping ahead.
