Description
Impressive cranberry brie stuffed chicken made with juicy chicken breasts, creamy melted brie, and sweet cranberry sauce for an elegant yet easy dinner.
Ingredients
2 large boneless, skinless chicken breasts
4 oz Brie cheese, rind removed and sliced
¼ cup whole-berry cranberry sauce
1 tbsp olive oil
1 tsp garlic powder
1 tsp dried thyme
½ tsp salt
¼ tsp black pepper
1 tbsp fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 375°F (190°C).
Using a sharp knife, carefully cut a pocket into the side of each chicken breast, being sure not to slice all the way through.
In a small bowl, combine garlic powder, dried thyme, salt, and black pepper. Season both the inside and outside of each chicken breast generously.
Stuff each chicken breast with Brie slices and a spoonful of cranberry sauce. Secure the openings with toothpicks.
Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 3–4 minutes per side, until golden brown.
Transfer the skillet to the oven and bake for 18–20 minutes, or until the internal temperature reaches 165°F (74°C).
Remove from the oven and rest for 5 minutes. Remove toothpicks, garnish with chopped parsley, and serve immediately.
