Description
Turn basic ramen noodles into a 15-minute stir-fry packed with veggies, eggs, and savory teriyaki sauce. This easy meal is budget-friendly and perfect for busy weeknights.
Ingredients
2 packages instant ramen noodles (discard seasoning packets)
1 Tbsp cooking oil
4 cups frozen mixed vegetables
2 eggs (optional)
½ cup teriyaki sauce
1 tsp garlic powder
1 tsp ginger powder
Optional Toppings:
Chopped green onions
Sesame seeds
Instructions
Cook ramen noodles according to package directions. Drain and set aside.
In a large skillet or wok, heat cooking oil over medium heat. Add frozen vegetables and cook for 4–5 minutes, stirring occasionally, until softened.
Push vegetables to one side of the pan. Crack in the eggs and scramble until fully cooked.
Add cooked noodles, teriyaki sauce, garlic powder, and ginger powder. Toss everything together until evenly coated and heated through.
Serve hot, topped with green onions and sesame seeds if desired.
Notes
Do not overcook ramen—slightly firm noodles work best.
Always add sauce last to ensure even coating.
Use a large nonstick skillet or wok to make tossing easier.
To reheat, use a splash of oil or water to loosen noodles.
