This flavorful Italian sausage pasta with bow tie noodles, peppers, and tomatoes brings a taste of Italy to your table—perfect for easy weeknight dinners.
Ingredients
12 oz bow tie pasta (farfalle)
1 lb Italian sausage
1 Tbsp olive oil
1 onion, diced
3 cloves garlic, minced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 (14.5 oz) can diced tomatoes (with juice)
1/2 cup chicken broth
1 tsp dried basil
1 tsp dried oregano
Salt and pepper, to taste
Grated Parmesan cheese, for serving
Instructions
Cook pasta according to package instructions. Drain and set aside.
In a large skillet over medium-high heat, add olive oil and cook Italian sausage until browned and cooked through, crumbling as it cooks. Remove from skillet and set aside.
In the same skillet, sauté onion and bell peppers for about 5 minutes until softened. Add garlic and cook for 1 more minute.
Stir in diced tomatoes, chicken broth, basil, and oregano. Bring mixture to a simmer.
Return cooked sausage to the skillet and simmer for 5–7 minutes to let flavors meld. Season with salt and pepper.
Add cooked pasta to the skillet and toss until everything is well combined and heated through.
Serve hot with grated Parmesan cheese on top.
Notes
Customize with spinach, zucchini, or crushed red pepper for added flavor.
Make it creamy by adding 1/4 cup heavy cream or a dollop of ricotta at the end.
Leftovers store well in the fridge for 3–4 days and reheat beautifully.
