Description
This spicy grilled cheese sandwich features creamy jalapeño spread, melty cheddar, and crispy toasted bread—everything you love about poppers in a handheld bite.
Ingredients
8 slices thick-cut bread (sourdough or Texas toast)
4 tbsp butter, softened
4 oz cream cheese, softened
½ cup shredded sharp cheddar cheese
2 jalapeños, seeded and finely chopped
4 slices pepper jack cheese (optional)
2 tbsp mayonnaise
1 tsp lime juice
Pinch of salt and black pepper
Instructions
In a bowl, combine cream cheese, mayo, lime juice, salt, and pepper. Stir in jalapeños.
Butter one side of each bread slice. On 4 unbuttered sides, spread the jalapeño cream cheese mixture.
Add shredded cheddar and pepper jack slices (if using).
Top with remaining bread slices, buttered side out.
Heat skillet over medium. Grill sandwiches 3–4 minutes per side until golden and melty.
Rest 1 minute before slicing and serving.
Notes
Use pickled jalapeños for milder flavor.
Add bacon bits or tomato slices for variation.
