Ingredients
For the Taco Meat:
1 pound ground beef
1 packet taco seasoning
¾ cup water
For the Casserole:
1 (16.3 oz) can refrigerated biscuit dough
1 cup sour cream
½ cup mayonnaise
1 cup shredded cheddar cheese (divided)
1 small onion, chopped
1 bell pepper, chopped
1 (4 oz) can diced green chiles
2 tomatoes, chopped
Salt and pepper, to taste
Nonstick cooking spray
Instructions
Preheat the oven: Set oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
Cook taco meat: In a skillet, brown the ground beef. Drain fat, stir in taco seasoning and water, and simmer 5 minutes until thickened. Remove from heat.
Prepare crust: Press biscuit dough evenly into the baking dish to form a crust. Bake 10 minutes.
Assemble casserole: In a bowl, mix sour cream, mayonnaise, half the cheddar, and onion. Spread over crust. Layer with taco meat, bell pepper, green chiles, tomatoes, and remaining cheddar.
Bake: Return to oven and bake 25–30 minutes, until cheese is melted and bubbly.
Serve: Let sit 5 minutes before slicing. Serve warm with salsa or guacamole.
Notes
Substitute ground turkey or plant-based protein for beef.
Add jalapeños for spice.
