Description
These cheesy keto biscuits are soft, low-carb, and air fryer-ready—made with cottage cheese, cheddar, and coconut flour for a perfect savory snack or side.
Ingredients
1 large egg (room temperature)
1/4 cup cottage cheese (4% milk fat recommended)
1/2 cup shredded cheddar cheese
1/4 cup coconut flour
1/2 tablespoon baking powder
1/8 teaspoon salt
3 teaspoons butter (divided) or avocado/olive oil spray
Instructions
Preheat air fryer to 180°C (350°F). Add 1 teaspoon of butter to each of 3 ramekins and heat in the air fryer for 3 minutes.
In a food processor, blend the egg and cottage cheese until smooth.
Add cheddar cheese, coconut flour, baking powder, and salt. Blend until a dough forms.
Use a 1/3 cup measuring scoop to portion the dough into 3 even mounds.
Place each portion into the prepared ramekins. Air fry for 10 minutes, or until biscuits are golden brown and set.
Let cool for 5–10 minutes. Add remaining butter on top of each biscuit and return to the air fryer for 1–2 minutes to melt. Serve warm.
Notes
Nut allergy? Use almond flour instead of coconut flour if needed.
Storage: Let biscuits cool completely before storing in an airtight container.
Reheating: For best texture, reheat in the air fryer for 2–3 minutes.
Can also be made in an oven if air fryer is not available; bake at 350°F (180°C) for 12–15 minutes.
