Description

This creamy keto cottage cheese fudge is a rich, chocolatey, low-carb treat made with peanut butter and no added sugar — the perfect protein-packed dessert.


Ingredients

1 cup natural peanut butter (no sugar added)

1 cup full-fat cottage cheese (4%)

1 cup sugar-free chocolate chips

4 tablespoons salted butter, divided

½ teaspoon chocolate liquid monk fruit sweetener (optional)

Optional Topping:

2 tablespoons peanut butter

1 tablespoon butter or coconut oil


Instructions

Line an 8×4-inch loaf pan with parchment paper.

In a blender or food processor, combine peanut butter and cottage cheese. Add 2 tbsp melted butter and blend until smooth.

In a microwave-safe bowl or saucepan, melt chocolate chips and remaining 2 tbsp butter until smooth.

Add melted chocolate to the blender mixture. Blend again until fully combined. Taste and add sweetener, if desired.

Pour the mixture into the prepared loaf pan. Spread evenly and refrigerate for 1 hour.

(Optional) Melt topping ingredients and pour over chilled fudge. Return to fridge for 30 more minutes.

Once set, cut into 16 pieces.

 

Notes

Substitute almond butter or sunflower seed butter for peanut butter.

Sweeten to taste with erythritol, stevia, or monk fruit drops.

Fold in chopped nuts or extra chocolate chips for texture before chilling.

Use silicone molds instead of a loaf pan for fun shapes.
