Description

Golden cauliflower tots top a creamy ground beef mixture in this delicious keto casserole—comforting, filling, and full of flavor.


Ingredients

For the Cauliflower Tots:

1 head cauliflower, cut into florets

1 cup shredded cheddar cheese

1/3 cup almond flour

1 large egg

Salt and pepper, to taste

For the Beef Filling:

1 lb ground beef

1/2 medium onion, finely chopped

2 cloves garlic, minced

4 oz cream cheese

1/3 cup heavy cream

Salt and pepper, to taste

Assembly:

1/2 cup shredded cheddar cheese (for topping)

1 tbsp butter or oil (for greasing)

Optional: chopped parsley or green onions, for garnish


Instructions

Make the Cauliflower Tots: Steam cauliflower florets until fork-tender (about 8–10 minutes). Transfer to a clean towel and squeeze out all moisture. In a large bowl, combine mashed cauliflower, cheddar, almond flour, egg, salt, and pepper. Form into small “tots” and place on a parchment-lined baking sheet. Bake at 400°F for 25–30 minutes, until golden and firm.

Prepare the Filling: In a skillet over medium heat, cook ground beef with onion and garlic until browned. Drain excess fat. Stir in cream cheese and heavy cream. Cook until melted and smooth. Season with salt and pepper to taste.

Assemble the Casserole: Preheat oven to 375°F. Grease a 9×13 baking dish. Spread the beef mixture into the bottom of the dish. Layer cauliflower tots on top. Sprinkle with remaining shredded cheese.

Bake: Bake for 20–25 minutes, until bubbly and golden on top. Let cool slightly, then garnish with parsley or green onions.

 

Notes

For crispier tots, broil for 2–3 minutes before using.

Substitute ground turkey or sausage for variety.

Add chopped spinach or mushrooms to the beef mixture for extra nutrients.

Store-bought keto tots can be used if time is short—check labels for clean ingredients.
