Description
This quick and flavorful beef stir-fry is packed with fresh veggies, herbs, and crumbled feta—perfect for a healthy Mediterranean-inspired dinner.
Ingredients
1 lb (450 g) lean ground beef
1 tbsp extra-virgin olive oil
1 small onion, chopped
2 cloves garlic, minced
1 red bell pepper, diced
1 medium zucchini, diced
1 cup cherry tomatoes, halved
1 tsp dried oregano
1/2 tsp dried thyme
1/4 tsp red pepper flakes (optional)
Salt and black pepper, to taste
2 tbsp tomato paste
2 tbsp beef or vegetable broth (optional)
1/2 cup crumbled feta cheese
2 tbsp chopped parsley or basil
Instructions
Heat olive oil in a skillet over medium heat. Sauté onion 2–3 minutes until translucent.
Add garlic, cook for 30 seconds until fragrant.
Add beef, cook 5–7 minutes until browned. Drain fat if needed.
Add bell pepper and zucchini. Cook 4–5 minutes until softened.
Stir in tomatoes, oregano, thyme, red pepper flakes, salt, and pepper.
Mix in tomato paste and broth (if using). Simmer 2–3 minutes.
Remove from heat. Top with feta and herbs.
Serve warm with rice or pita.
Notes
Swap ground beef for turkey or lamb.
Add spinach or kale for extra greens.
For dairy-free, omit feta and use olives for briny flavor.
