This flavorful ground chicken meatloaf is packed with garlic, herbs, and Parmesan—perfect for a protein-rich, comforting dinner the whole family will enjoy.
Ingredients
2 pounds ground chicken (93% lean preferred)
3/4 cup grated Parmesan cheese
3/4 cup breadcrumbs (Italian-style or plain)
2 large eggs
4 cloves garlic, minced
1 small onion, finely chopped
1/4 cup milk
1 tbsp Worcestershire sauce
1 tsp dried basil
1/2 tsp salt
1/2 tsp black pepper
1/2 cup shredded mozzarella cheese (optional topping)
Fresh parsley, chopped (for garnish)
Instructions
Preheat oven to 375°F (190°C). Lightly grease or line a 9×5-inch loaf pan.
In a large bowl, combine ground chicken, Parmesan, breadcrumbs, eggs, garlic, onion, milk, Worcestershire sauce, basil, salt, and pepper.
Mix until just combined to avoid overworking the mixture.
Transfer to the loaf pan, shaping into an even loaf.
Bake uncovered for 45–50 minutes, or until internal temperature reaches 165°F (74°C).
If using mozzarella, sprinkle on top during the last 10 minutes of baking.
Rest for 5–10 minutes before slicing. Garnish with parsley and serve.
Notes
Add veggies like spinach, zucchini, or mushrooms for more nutrition.
Swap mozzarella for cheddar or provolone for a flavor twist.
Use gluten-free breadcrumbs to make it GF-friendly.
For a spicy version, add jalapeños or red pepper flakes.
