Ingredients
8 oz cream cheese, softened
¼ cup powdered sugar
½ tsp pure vanilla extract
½ cup graham cracker crumbs (plus more for coating)
Optional: Pinch of salt
Optional: Mini chocolate chips or sprinkles for topping
Instructions
Mix the Base: In a medium mixing bowl, beat softened cream cheese until smooth and creamy.
Add Flavor: Add powdered sugar, vanilla extract, and a pinch of salt (if using). Beat again until well combined.
Add Crumbs: Stir in ½ cup graham cracker crumbs until evenly mixed.
Chill: Refrigerate the mixture for 30 minutes to allow it to firm up.
Form Balls: Scoop and roll into bite-sized balls using your hands or a small cookie scoop.
Coat & Decorate: Roll each ball in additional graham cracker crumbs. Add mini chocolate chips or sprinkles on top if desired.
Serve or Store: Store in an airtight container in the fridge for up to 5 days. Serve chilled.
