This Oatmeal Apple Breakfast Bake is the perfect combination of tender apples, warm cinnamon, and wholesome oats. Baked to perfection, it’s a hearty and healthy breakfast or snack option that’s both vegan and gluten-free.
Ingredients
2 cups rolled oats
2 medium apples, peeled, cored, and diced
½ cup almond milk (or milk of choice)
¼ cup maple syrup
¼ cup coconut oil, melted
1 teaspoon ground cinnamon
½ teaspoon vanilla extract
Pinch of salt
Instructions
Preheat oven to 350°F (175°C) and grease a 9×9-inch baking dish.
In a bowl, mix oats, diced apples, cinnamon, and salt.
In another bowl, whisk almond milk, maple syrup, melted coconut oil, and vanilla.
Combine wet and dry ingredients and stir to mix.
Pour mixture into baking dish and spread evenly.
Bake for 35–40 minutes until golden and set.
Cool slightly before slicing and serving.
Notes
Top with chopped walnuts or almonds before baking for added crunch.
Mix in raisins or cranberries for extra sweetness.
Use coconut milk or serve with yogurt for a richer option.
