These carrot cake oat bites are soft, naturally sweet, and loaded with carrots, oats, and raisins. A healthy snack or breakfast option that’s gluten-free and kid-approved.
Ingredients
1½ cups rolled oats
1 cup finely grated carrots
½ cup unsweetened applesauce
2 tbsp maple syrup or honey
1 tsp ground cinnamon
½ tsp vanilla extract
¼ tsp ground ginger (optional)
Pinch of salt
¼ cup raisins or chopped dates
Instructions
Preheat oven to 350°F (175°C) and line a muffin tin with silicone liners or parchment.
In a large bowl, mix oats, grated carrots, cinnamon, ginger (if using), and salt.
Add applesauce, maple syrup, and vanilla; mix until evenly moist.
Fold in raisins or chopped dates.
Scoop into 12 muffin cups or spread in a baking dish.
Bake for 18–20 minutes, until edges are golden and centers are set.
Cool slightly before serving warm or chilled.
Notes
For added texture, include shredded coconut or chopped nuts.
Swap raisins with dried cranberries or apricots for variety.
Mashed banana can replace applesauce if needed.
