Ingredients

2 medium zucchinis, sliced into 1/4-inch rounds

1 tablespoon olive oil

1/4 teaspoon black pepper

1/2 teaspoon garlic powder

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 tablespoon chopped fresh parsley (optional)


Instructions

Preheat oven to 400°F (200°C). Grease or line a baking sheet.

Toss zucchini slices in olive oil, salt, pepper, and garlic powder.

Arrange zucchini in a single layer on the baking sheet.

Sprinkle mozzarella and Parmesan evenly over the zucchini.
