Description
This hearty one-skillet meal combines seasoned ground beef, tender potatoes, and melted cheese for an easy, comforting dinner with minimal cleanup.
Ingredients
1 pound ground beef (or any ground meat of your choice)
3 cups sliced potatoes (about 3 medium potatoes)
1 cup chopped onions
1 cup bell pepper, chopped (any color)
2 cloves garlic, minced
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried oregano
1 cup shredded cheese (cheddar or preferred blend)
2 tablespoons olive oil
Fresh parsley, chopped (optional, for garnish)
Instructions
Prepare the Skillet: Heat olive oil in a large skillet over medium heat.
Cook the Meat: Add ground beef and cook until browned, breaking it into small pieces as it cooks. Drain excess grease if needed.
Add Vegetables: Stir in chopped onions, bell peppers, and garlic. Cook for 5 minutes, until veggies are softened.
Add Potatoes & Seasoning: Add sliced potatoes. Sprinkle with paprika, salt, pepper, and oregano. Stir well to coat.
Simmer: Cover and cook over medium-low heat for 20–25 minutes, stirring occasionally, until potatoes are fork-tender.
Add Cheese: Sprinkle cheese over the top. Cover and cook an additional 2–3 minutes until melted and bubbly.
Serve: Garnish with parsley if desired and serve warm.
Notes
You can substitute ground beef with turkey, chicken, or plant-based alternatives.
Yukon Gold or red potatoes work well for a creamier texture.
Add a splash of broth if the skillet gets too dry during simmering.
Makes excellent leftovers for lunch the next day!
