This hearty stew features tender chicken thighs, sweet onions, and rosemary simmered in a savory broth—comfort food made simple.
Ingredients
2 pounds chicken thighs (bone-in, skin-on)
3 large yellow onions, thickly sliced
4 garlic cloves, smashed
3 tablespoons olive oil
3 cups chicken broth
2 sprigs fresh rosemary
1½ teaspoons salt
½ teaspoon black pepper
Instructions
Warm a heavy pot over medium heat for 2–3 minutes.
Add olive oil and sear chicken thighs skin-side down until golden, about 5 minutes per side. Remove and set aside.
In the same pot, add sliced onions and garlic. Cook for 5–7 minutes until softened.
Return chicken to the pot, nestling it among the onions.
Pour in chicken broth and add rosemary sprigs.
Season with salt and pepper. Gently stir to combine, keeping chicken mostly on top.
Bring to a gentle simmer, then cover and cook on low heat for 40 minutes, until chicken is fork-tender.
Remove rosemary sprigs. Adjust seasoning to taste.
Serve hot in bowls with rice or crusty bread.

Searing the chicken well builds a richer base flavor.
Add carrots or potatoes for a heartier version.
