Description

These easy peach crumble bars are packed with juicy fruit and a buttery oat crust—perfect for summer desserts, picnics, or sweet snacks anytime.


Ingredients

3 cups fresh or frozen peaches, chopped

1 tablespoon lemon juice

½ cup sugar

1 tablespoon cornstarch

1½ cups all-purpose flour

½ cup rolled oats

½ cup brown sugar

½ teaspoon baking powder

¼ teaspoon salt

½ cup cold butter, cubed

1 teaspoon vanilla extract


Instructions

Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan.

In a bowl, combine peaches, lemon juice, sugar, and cornstarch. Set aside.

In another bowl, mix flour, oats, brown sugar, baking powder, and salt. Cut in cold butter until crumbly. Stir in vanilla.

Press two-thirds of the crumble into the pan. Spread peach mixture evenly over crust.

Sprinkle remaining crumble over the top.

Bake 35–40 minutes, until golden and bubbling.

Cool at least 15 minutes before slicing.

Notes

Add berries or chopped nuts for variation.

A pinch of cinnamon or nutmeg enriches the peach flavor.

Works with fresh, frozen, or well-drained canned peaches.
