Description

These soft-baked peach bars feature a buttery crust, juicy peach filling, and golden oat crumble—your go-to summer dessert.


Ingredients

For the Crust:

2 cups all-purpose flour

½ cup granulated sugar

½ tsp baking powder

¼ tsp salt

½ cup unsalted butter, softened

1 large egg

1 tsp vanilla extract

For the Filling:

2 cups fresh peaches, peeled and chopped

¼ cup granulated sugar

1 tbsp cornstarch

¼ tsp cinnamon

1 tbsp lemon juice

¼ tsp vanilla extract

For the Topping:

½ cup rolled oats

¼ cup light brown sugar

¼ cup all-purpose flour

¼ tsp ground cinnamon

¼ cup unsalted butter, cold and cubed


Instructions

Preheat oven to 350°F (175°C) and grease a 9×9-inch baking dish.

Mix flour, sugar, baking powder, and salt. Add butter, egg, and vanilla; mix until crumbly dough forms.

Press crust mixture into the dish and bake for 15 minutes.

While crust bakes, toss peaches with sugar, cornstarch, cinnamon, lemon juice, and vanilla.

In a separate bowl, mix oats, brown sugar, flour, and cinnamon. Cut in cold butter until crumbly.

Spread peach filling over baked crust. Sprinkle oat topping evenly.

Bake for 35–40 minutes, until golden and bubbly.

Cool completely in pan before slicing into bars.

Notes

Use ripe but firm peaches for best texture.

Chilling before slicing improves clean cuts.
