Description

These chewy peanut butter oatmeal chocolate chip cookies are naturally sweetened and packed with flavor—perfect for a quick dessert or wholesome snack.


Ingredients

1 cup rolled oats

½ cup peanut butter (smooth or chunky)

¼ cup coconut oil (melted) or butter

¼ cup brown sugar

¼ cup maple syrup or honey

1 teaspoon vanilla extract

½ teaspoon baking soda

¼ teaspoon salt

½ cup chocolate chips

1 egg (or egg substitute)


Instructions

Preheat oven to 350°F (175°C) and line a baking sheet with parchment.

In a large bowl, mix oats, peanut butter, coconut oil, brown sugar, maple syrup, vanilla, baking soda, and salt.

Add egg or egg substitute and mix until dough forms.

Fold in chocolate chips.

Scoop dough, roll into balls, and place 2 inches apart on baking sheet.

Flatten each cookie slightly.

Bake 8–10 minutes until edges are golden.

Cool on baking sheet briefly, then transfer to a rack.

Notes

Add chopped nuts, cinnamon, or a peanut butter drizzle.

Use dark chocolate chips for richer flavor.

Natural peanut butter works with good stirring.
