Description

This pineapple cucumber salad is crisp, juicy, and tossed in a refreshing honey-lime dressing. A tropical side dish that’s perfect for BBQs, picnics, and warm-weather meals.


Ingredients

1½ cups fresh pineapple, diced

1 small Persian cucumber (or 1 English cucumber), diced

⅓ cup red onion, finely diced

¼ cup fresh cilantro, chopped

2 tbsp honey

2 tbsp rice vinegar

1 tbsp fresh lime juice (about 1 lime)

¼ tsp chili oil (optional)

½ tsp coarse salt


Instructions

In a large bowl, whisk honey, rice vinegar, lime juice, chili oil (if using), and salt.

Add pineapple, cucumber, red onion, and cilantro.

Toss gently until evenly coated.

Chill in fridge for 20 minutes before serving.

Toss again and adjust seasoning if needed.

Notes

Add diced avocado for creaminess.

Swap pineapple for mango or papaya for a twist.

Use mint or basil if not a fan of cilantro.
