These ranch chicken skewers are marinated in garlic, Parmesan, and lemon for bold flavor and grilled to juicy perfection—perfect for BBQs or weeknight dinners.
Ingredients
1 lb chicken breast, cut into 1-inch cubes
1/4 cup ranch dressing
2 tablespoons olive oil
3 cloves garlic, minced
1/4 cup grated Parmesan cheese
1 tablespoon fresh parsley, chopped
1 tablespoon lemon juice
Salt and pepper, to taste
Skewers (wooden or metal)
Instructions
In a large bowl, whisk together ranch dressing, olive oil, garlic, Parmesan, parsley, lemon juice, salt, and pepper.
Add chicken cubes and toss to coat. Cover and marinate in the refrigerator for at least 30 minutes (up to 2 hours).
Preheat grill to medium-high. Soak wooden skewers in water for 10–15 minutes if using.
Thread marinated chicken onto skewers, spacing pieces slightly.
Grill for 5–7 minutes per side, until chicken is fully cooked and has grill marks.
Garnish with extra parsley if desired. Serve hot with a dipping sauce or side dish.
Notes
Add crushed red pepper flakes for heat.
Boneless thighs can be used instead of breasts for more juiciness.
Bake in a 400°F oven for 15–20 minutes as an alternative to grilling.
Fresh Parmesan yields better flavor, but pre-grated is acceptable.
