These no-bake Ritz cracker sandwiches are filled with a creamy cheese spread and colorful veggies—perfect for parties, potlucks, or quick snacks.

1 box Ritz crackers
½ cup cream cheese, softened
¼ cup cheddar cheese, finely shredded
¼ cup green onions, finely chopped
¼ cup red bell pepper, finely diced

Instructions
In a medium bowl, combine softened cream cheese, shredded cheddar, chopped green onions, and diced red bell pepper. Mix until fully incorporated.
Take one Ritz cracker and spread a generous layer of the cheese mixture on it.
Top with a second cracker to form a sandwich.
Repeat until all the cheese mixture is used and sandwiches are assembled.
Place the assembled sandwiches on a serving tray and refrigerate for at least 30 minutes to let flavors meld and the filling set.
Notes
Use fully softened cream cheese for smooth mixing.
Add garlic powder or a dash of hot sauce to the filling for an extra kick.
Best served chilled, but can be stored in the fridge for up to 24 hours.
