Ingredients
2 delicata squash
Extra-virgin olive oil, for drizzling
Sea salt and freshly ground black pepper
Instructions
Preheat oven to 425°F and line a baking sheet with parchment paper.
Cut delicata squash in half lengthwise. Scoop out seeds and slice into 1/2-inch thick half-moons.
Place squash slices on the baking sheet. Drizzle with olive oil and toss to coat evenly.
Arrange in a single layer and season with salt and pepper.
Roast for 20–25 minutes, flipping halfway, until golden and tender.
Serve warm or at room temperature.
Notes
No need to peel delicata squash—the skin becomes tender when roasted.
Optional: sprinkle with herbs like thyme or rosemary for extra flavor.
