These cheesy sausage bites made with Rotel, cream cheese, and baking mix are spicy, savory, and perfect for game day or parties.
Ingredients
1 lb breakfast sausage
8 oz cream cheese, softened
1 can (10 oz) Rotel tomatoes with green chilies, drained
1 ½ cups shredded cheddar cheese
1 ½ cups baking mix (e.g., Bisquick)
½ tsp cayenne pepper (optional)
Instructions
Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large bowl, combine sausage, cream cheese, drained Rotel, cheddar cheese, baking mix, and cayenne.
Mix until thoroughly combined, then shape into 1-inch balls.
Arrange on baking sheet and bake for 18–20 minutes, until golden and fully cooked.
Serve warm or at room temperature.
Notes
Use turkey sausage or gluten-free baking mix for dietary preferences.
Pepper jack cheese adds extra heat.
Chill mixture briefly if too soft to roll.
