Description

This sausage and sweet potatoes with honey garlic sauce recipe is a sweet and savory one-pan meal perfect for busy weeknights or cozy dinners.


Ingredients

Main Ingredients:

1 lb smoked sausage or kielbasa, sliced into ½-inch rounds

2 large sweet potatoes, peeled and cubed

1 tbsp olive oil

Salt and pepper, to taste

Optional: 1 small red onion, sliced

Optional: 1 red bell pepper, chopped

Honey Garlic Sauce:

¼ cup honey

2 tbsp soy sauce (or tamari for gluten-free)

2 tbsp water

1 tbsp apple cider vinegar

3 garlic cloves, minced

½ tsp crushed red pepper flakes (optional)

1 tsp cornstarch + 1 tsp water (optional for thickening)


Instructions

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

In a large bowl, toss cubed sweet potatoes (and optional veggies) with olive oil, salt, and pepper. Spread evenly on the baking sheet and roast for 15 minutes.

While the potatoes roast, slice the sausage. After 15 minutes, add sausage slices to the pan and toss everything together. Roast for another 20–25 minutes, stirring halfway through, until sweet potatoes are tender and sausage is browned.

Make the honey garlic sauce: In a small saucepan, combine honey, soy sauce, water, vinegar, garlic, and red pepper flakes. Bring to a simmer over medium heat. If desired, stir in cornstarch slurry to thicken. Simmer for 1–2 more minutes until slightly thickened.

Drizzle the sauce over the sausage and sweet potato mixture once out of the oven. Toss to coat everything evenly.

Garnish with chopped parsley or green onions, if desired. Serve hot.

Notes

Use chicken sausage or turkey sausage for a lighter option.

Add Brussels sprouts or carrots for extra veggies.

Serve over rice, quinoa, or on its own for a low-carb meal.

The sauce can be doubled if you want it extra saucy.
