4 large flour tortillas
4 cooked breakfast sausages
4 large eggs
1/4 cup milk
1/2 cup shredded cheddar cheese
1 tbsp butter or cooking spray
Salt and pepper to taste
Instructions
In a small bowl, whisk together eggs, milk, salt, and pepper.
Heat a skillet over medium heat, add butter or cooking spray, and scramble the eggs until just set. Remove from heat.
Lay each tortilla flat and place one sausage in the center.
Top with scrambled eggs and sprinkle with shredded cheddar cheese.
Roll up the tortilla tightly, folding in the sides as you go.
Place roll-ups seam-side down in a skillet and heat until golden and slightly crispy, about 2–3 minutes per side.
Serve warm and enjoy!

You can use whole wheat or low-carb tortillas for a healthier twist.
Swap cheddar for pepper jack for a spicy kick.
