These easy roll-ups combine sweet French toast and savory sausage in one handheld bite — perfect for busy mornings, brunches, or kid-friendly breakfasts.
Ingredients
Main Ingredients:
8 slices white or whole wheat sandwich bread, crusts removed
8 cooked breakfast sausage links (pork, turkey, or plant-based)
3 large eggs
¼ cup milk (dairy or non-dairy)
½ tsp ground cinnamon
1 tsp vanilla extract
2 tbsp maple syrup (optional, for added sweetness in egg mix)
2 tbsp butter or oil, for frying
Optional Toppings:
Powdered sugar
Maple syrup
Fresh berries
Instructions
Prep Bread: Flatten each slice of bread with a rolling pin to make it flexible.
Wrap Sausage: Place one sausage link at the edge of each bread slice and roll tightly.
Make Egg Mixture: In a shallow bowl, whisk eggs, milk, cinnamon, vanilla, and maple syrup (if using).
Heat Skillet: Melt butter or heat oil in a skillet over medium heat.
Dip & Fry: Dip each roll-up in the egg mixture, coating all sides. Place seam-side down in the skillet. Cook 2–3 minutes per side until golden and cooked through.
Serve: Serve warm with a dusting of powdered sugar, drizzle of syrup, and fresh berries if desired.
Notes
Add a slice of cheese before rolling for extra flavor.
Spread jam, apple butter, or banana on bread before rolling for a fruity twist.
Use nutmeg or cayenne in the egg mix for spice.
For a vegan version, use plant-based sausage, dairy-free milk, and a flax egg.
To bake instead: brush with butter and bake at 375 °F for 12–15 minutes, flipping once.
