Ingredients
For the Beef:
1 lb beef tips (or stew meat), trimmed
2 tablespoons butter, divided
1 tablespoon olive oil
Salt and pepper, to taste
1 small onion, finely chopped
2 cloves garlic, minced
½ cup beef broth
¼ cup Worcestershire sauce
1 teaspoon dried thyme (or fresh)
1 teaspoon Dijon mustard (optional)
For the Noodles:
8 oz egg noodles
2 tablespoons butter
For Garnish:
Fresh parsley, chopped
Instructions
Season beef tips with salt and pepper. Melt 1 tablespoon butter with olive oil in a skillet over medium-high heat. Sear beef on all sides until browned, about 4–5 minutes. Remove beef and set aside.
In same pan, add remaining butter and sauté onion until softened (~3 minutes). Add garlic and cook 30 seconds until fragrant.
Stir in beef broth, Worcestershire sauce, thyme, and Dijon mustard. Scrape browned bits from pan. Return beef to pan, reduce heat to low, cover, and simmer 25–30 minutes until tender.
Cook egg noodles per package instructions until al dente. Drain and toss with butter until coated.
Adjust gravy seasoning with salt and pepper. Serve beef tips and gravy over buttered noodles. Garnish with parsley.
Notes
Add red pepper flakes for a mild kick.
Splash red wine in gravy for deeper flavor.
