This quick and fluffy biscuit combines all the flavor of everything bagels with the ease of a high-protein, almond flour batter—perfect for breakfast or snack time.
Ingredients
1/4 cup cottage cheese
1 large egg
3 tablespoons almond flour
1 tablespoon “Everything But The Bagel” seasoning (plus more for topping)
1/2 teaspoon baking powder
Pinch of salt
Instructions
In a small bowl, whisk together cottage cheese, egg, almond flour, 1 tablespoon of seasoning, baking powder, and salt until smooth.
Grease a 4-inch ramekin and pour in the batter. Sprinkle extra seasoning on top.
Microwave Option: Cook on high for 2 to 2 ½ minutes, until puffed and set.
Oven Option: Preheat oven to 350°F (175°C) and bake for 12–15 minutes, until golden and cooked through.
Let biscuit cool for 1 minute, then run a knife around the edge to release. Slice and serve warm.
