Description
This shrimp corn skillet is sautéed in garlic butter with smoky spices and lemon. A fast, flavorful one-pan meal perfect for weeknight dinners or summer gatherings.
Ingredients
1 lb (450 g) shrimp, peeled and deveined
2 cups fresh or frozen corn kernels
3 tbsp butter
1 tbsp olive oil
1 small onion, diced
3 cloves garlic, minced
½ tsp smoked paprika
¼ tsp red pepper flakes (optional)
2 tbsp fresh parsley, chopped
Juice of ½ lemon
Salt and pepper, to taste
Instructions
Heat butter and olive oil in a large skillet over medium heat.
Add onion and cook 2–3 minutes until softened.
Stir in garlic, paprika, and red pepper flakes; cook 30 seconds.
Add shrimp and corn; season with salt and pepper. Cook 4–5 minutes until shrimp are pink.
Stir in lemon juice and parsley.
Remove from heat and serve immediately.
Notes
Add cherry tomatoes or bell peppers for extra freshness.
Swap parsley with cilantro or add grated parmesan.
Serve over rice, couscous, or with crusty bread.
