Description

This rich and melty grilled cheese sandwich features tender shrimp, gooey cheddar and mozzarella, and garlicky buttered sourdough—comfort food with a gourmet twist.


Ingredients

8 large shrimp, peeled, deveined, cooked, and sliced

4 slices sourdough bread

½ cup shredded cheddar cheese

½ cup shredded mozzarella cheese

2 Tbsp butter + 1 Tbsp garlic butter

1 Tbsp olive oil

Salt & pepper, to taste


Instructions

Cook Shrimp: In a skillet, heat olive oil over medium heat. Season shrimp with salt and pepper. Cook 2–3 minutes per side, then slice once slightly cooled.

Assemble Sandwiches: Butter one side of each bread slice with garlic butter. On the unbuttered side of two slices, layer cheddar, mozzarella, then shrimp. Top with remaining bread (garlic side out).

Grill: In the skillet, melt the remaining butter over medium heat. Add sandwiches and cook 3–4 minutes per side, pressing gently, until bread is golden and cheese is melted.

Serve: Let sandwiches rest for a minute, then slice in half and enjoy hot.

Notes

Add spinach, arugula, or jalapeño slices for extra flavor.

Swap cheeses to Swiss, gouda, or brie for a different twist.

Use a panini press in place of skillet cooking if desired.
