Description
These golden, crispy Southern fried salmon patties are made with canned salmon, seasoned with lemon and onions, and fried to perfection for a comforting meal or appetizer.
Ingredients
1 lb canned salmon, drained and flaked
½ cup finely chopped onion
½ cup crushed saltine crackers
¼ cup mayonnaise
1 egg
1 tablespoon lemon juice
Salt and black pepper, to taste
2 tablespoons vegetable oil (for frying)
Instructions
In a large bowl, combine flaked salmon, chopped onion, crushed saltine crackers, mayonnaise, egg, and lemon juice.
Mix thoroughly and season with salt and black pepper.
Form mixture into 6–8 evenly sized patties.
Heat vegetable oil in a skillet over medium heat.
Fry patties 3–4 minutes per side until golden brown and cooked through.
Drain on paper towels and serve hot with tartar sauce or lemon wedges.
Notes
Add cayenne pepper or jalapeños for a spicy kick.
Substitute saltine crackers with Ritz or graham crackers for a different texture.
Try adding Dijon mustard or Old Bay seasoning for extra flavor.
