Description

Tender salmon fillets rolled with a creamy spinach and feta filling, then baked to perfection. A healthy, elegant dinner that’s low carb and full of flavor.


Ingredients

4 salmon fillets (skinless, about 6 oz each)

2 cups fresh spinach, chopped

1 tablespoon olive oil

2 cloves garlic, minced

½ cup crumbled feta cheese

2 tablespoons cream cheese

1 tablespoon lemon juice

Salt and black pepper to taste

Lemon wedges and chopped parsley for garnish (optional)


Instructions

Preheat Oven: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

Make Filling: Heat olive oil in a skillet over medium heat. Add garlic; sauté for 1 minute. Add spinach and cook until wilted. Stir in feta, cream cheese, lemon juice, salt, and pepper. Cool slightly.

Prepare Salmon: Butterfly each salmon fillet and gently flatten for even thickness.

Assemble: Spread filling over each fillet. Roll tightly to form pinwheels. Secure with toothpicks or kitchen twine.

Bake: Place seam-side down on the baking sheet. Bake for 18–20 minutes, or until salmon is fully cooked and flakes easily.

Serve: Garnish with lemon wedges and parsley. Serve warm.

 

Notes

Use a mallet or rolling pin to evenly flatten the salmon for easier rolling.

Goat cheese or ricotta can be substituted for feta.

Avoid overcooking; salmon should reach 145°F (63°C) internal temp.
