Description

These strawberry cheesecake protein balls are packed with flavor and protein, coated in sugar-free chocolate for the perfect healthy no-bake treat.


Ingredients

Filling:

½ cup strawberry whey protein powder (48g)

¼ cup Neufchâtel cheese (56g), at room temperature

¼ tsp vanilla stevia

Chocolate Coating:

24g unsweetened chocolate

2 mini scoops stevia powder (or to taste)

Optional Drizzle (approximate):

3 tbsp confectioners erythritol

½ tsp red superfood drink powder


Instructions

In a bowl, mix strawberry whey protein, Neufchâtel cheese, and vanilla stevia until smooth.

Roll mixture into 8 equal-sized balls. Place on a parchment-lined tray and refrigerate. If sticky, freeze for 5–10 minutes before smoothing them.

Melt chocolate in a double boiler, stir in stevia, and transfer to a small bowl.

Dip each protein ball into the chocolate using a fork, coat evenly, and place back on parchment. Chill for at least 10 minutes until the coating sets. Optional: coat again for a thicker shell.

For the drizzle (optional): Mix erythritol and superfood powder, then drizzle over the chilled protein balls.

Store in the refrigerator and enjoy chilled.

Notes

Nutrition info does not include the optional drizzle, which adds minimal calories.

If substituting with casein or a whey/casein blend, you may need to add a small amount of water to achieve the right texture.
