Description

Ingredients

Salad:

4 cups mixed salad greens (spring mix, baby spinach, or arugula)

1 cup fresh strawberries, hulled and sliced

½ cup candied pecans or walnuts

½ cup crumbled goat cheese or feta

½ cup cucumber, thinly sliced

¼ cup red onion, thinly sliced

Optional: 1 avocado, sliced

Champagne Vinaigrette:

3 Tbsp extra virgin olive oil

2 Tbsp champagne vinegar

1 tsp honey or maple syrup

1 tsp Dijon mustard

Pinch of sea salt

Dash of freshly ground black pepper


Instructions

Make the vinaigrette: In a small bowl or jar, whisk together olive oil, champagne vinegar, honey, Dijon mustard, salt, and pepper until emulsified.

Prep salad ingredients: Wash and dry greens, slice strawberries, cucumber, and onion.

Assemble the salad: In a large bowl or serving platter, layer greens, strawberries, candied nuts, goat cheese, cucumber, onion, and avocado (if using).

Dress and toss: Drizzle the champagne vinaigrette over the salad and toss gently to combine.

Serve immediately for the best texture and flavor.
