Description
Soft, buttery cookies infused with freeze-dried strawberries and rolled in sparkling strawberry sugar—these strawberry sugar cookies are a fruity, sweet treat perfect for summer or Valentine’s Day.
Ingredients
For the cookies:
1 cup unsalted butter, softened
1¼ cups granulated sugar
1 large egg
1 tsp vanilla extract
½ tsp almond extract
3 Tbsp freeze-dried strawberry powder
2½ cups all-purpose flour
½ tsp baking soda
½ tsp salt
For the sparkling strawberry sugar:
¼ cup granulated sugar
2 Tbsp freeze-dried strawberry powder
Instructions
Preheat oven to 350°F (175°C) and line baking sheets with parchment.
Cream butter and sugar for 2–3 minutes until light and fluffy.
Beat in egg, vanilla, and almond extract.
Mix in strawberry powder until combined.
In a separate bowl, whisk flour, baking soda, and salt. Gradually add to wet mixture to form a soft dough.
Combine sparkling sugar ingredients in a small bowl.
Scoop dough into tablespoon-sized balls and roll in strawberry sugar.
Place 2 inches apart on baking sheets.
Bake for 9–11 minutes until edges are set and centers look slightly underbaked.
Cool on sheet 5 minutes, then transfer to a wire rack.
Notes
White chocolate chips add a creamy twist.
For a citrusy variation, swap almond extract with lemon extract.
Dough can be chilled or frozen ahead of time.
