Soft, chewy sugar cookie bars topped with sweet frosting and sprinkles—perfect for parties, holidays, or everyday baking.
Ingredients
For the Bars:
1 cup unsalted butter, softened
1 1/4 cups granulated sugar
1 large egg
1 egg yolk
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
For the Frosting:
1/2 cup unsalted butter, softened
2 cups powdered sugar
2–3 tablespoons milk
1 teaspoon vanilla extract
Food coloring (optional)
Sprinkles (for topping)
Instructions
Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
In a large bowl, cream together butter and granulated sugar until light and fluffy.
Add egg, egg yolk, and vanilla extract; mix until combined.
In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to wet ingredients, mixing until a soft dough forms.
Press dough evenly into prepared pan.
Bake for 18–22 minutes, or until edges are lightly golden and center is set. Do not overbake.
Let bars cool completely before frosting.
For frosting: Beat softened butter until smooth. Gradually add powdered sugar, milk, and vanilla. Mix until fluffy. Tint with food coloring if desired.
Spread frosting over cooled bars and top with sprinkles.
Slice into squares or rectangles and serve.
Notes
Add almond extract to the dough or frosting for a bakery-style flavor.
Store bars in an airtight container at room temperature for up to 3 days, or refrigerate for up to 5 days.
These bars can be frozen, frosted or unfrosted, for up to 2 months.
