Ingredients
1 cup unsalted butter, softened
1/2 cup powdered sugar, plus extra for dusting
1 tablespoon lemon zest (from 2 lemons)
2 teaspoons fresh lemon juice
2 cups all-purpose flour
1/4 teaspoon salt
1 teaspoon vanilla extract
Instructions
Preheat oven to 325°F (163°C) and line a baking sheet with parchment paper.
Cream softened butter and powdered sugar until light and fluffy.
Mix in lemon zest, lemon juice, and vanilla extract.
In a separate bowl, whisk together flour and salt.
Gradually add flour mixture to the butter mixture and blend until a soft dough forms.
Shape dough into 1-inch balls and place 2 inches apart on the baking sheet.
Bake 15–18 minutes, until bottoms are lightly golden and tops remain pale.
Cool on baking sheet for 5 minutes, then roll cookies gently in powdered sugar while warm.
Transfer to a wire rack to cool completely. Dust with extra powdered sugar if desired.
