Creamy, hearty, and packed with flavor, this easy chicken gnocchi soup uses rotisserie chicken for a comforting meal ready in no time.
Ingredients
1 rotisserie chicken, shredded
1 bag (16 oz) potato gnocchi
1 medium onion, diced
2 cloves garlic, minced
3 carrots, sliced
2 celery stalks, sliced
4 cups chicken broth
1 cup heavy cream
1 teaspoon dried thyme
1 teaspoon dried parsley
Salt and pepper, to taste
2 tablespoons olive oil
Fresh parsley, for garnish (optional)
Instructions
Prepare Ingredients: Shred rotisserie chicken. Dice onion, slice carrots and celery, and mince garlic.
Heat Olive Oil: In a large pot over medium heat, warm olive oil.
Sauté Vegetables: Add onion, carrots, and celery. Cook for about 5 minutes until softened.
Add Garlic: Stir in garlic and sauté for 1–2 minutes until fragrant.
Pour in Broth: Add chicken broth and bring to a boil.
Add Gnocchi: Add gnocchi and cook per package instructions (2–3 minutes).
Stir in Chicken: Add shredded chicken to the pot.
Add Cream and Seasonings: Pour in heavy cream, then add thyme, parsley, salt, and pepper. Stir well.
Simmer: Let soup simmer for 5–10 minutes to combine flavors.
Garnish and Serve: Ladle into bowls and garnish with fresh parsley if desired.
Notes
Substitute half-and-half for a lighter version.
For added greens, stir in fresh spinach at the end.
Use homemade broth for deeper flavor, if available.
Gnocchi should be added right before serving if prepping ahead, to maintain texture.
