Ingredients
2 cups cherry tomatoes, halved
1 large cucumber, sliced into half-moons
1/2 red onion, thinly sliced
2 tablespoons olive oil
1 tablespoon red wine vinegar
1 teaspoon lemon juice
1/4 teaspoon dried oregano
Salt and black pepper, to taste
1 tablespoon chopped fresh parsley (optional)
Instructions
In a large bowl, combine cherry tomatoes, cucumber slices, and red onion.
In a separate small bowl, whisk together olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper.
Pour the dressing over the vegetables and gently toss to coat evenly.
Let sit for 10–15 minutes to enhance flavor.
Garnish with fresh parsley if desired and serve chilled or at room temperature.
