Description

A healthy one-pan dinner packed with lean turkey, sweet potatoes, spinach, and bold spices. Quick, hearty, and ready in 30 minutes.


Ingredients

1 tablespoon olive oil

1 medium onion, chopped

2 cloves garlic, minced

2 medium sweet potatoes, peeled and diced (½-inch cubes)

1 pound ground turkey

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper to taste

1 bell pepper, chopped

2 cups fresh spinach, chopped

Fresh parsley, chopped (for garnish)


Instructions

Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add chopped onion and garlic; sauté for 2–3 minutes until translucent.

Cook Sweet Potatoes: Stir in diced sweet potatoes. Cook for about 10 minutes, stirring occasionally, until slightly softened.

Brown Turkey: Add ground turkey. Break it up with a spatula and cook for 5–7 minutes, until browned and cooked through.

Season: Stir in smoked paprika, cumin, salt, and pepper. Mix well.

Add Veggies: Add chopped bell pepper and spinach. Cook for 3–4 minutes, until the pepper softens and spinach wilts.

Garnish & Serve: Remove from heat. Garnish with chopped parsley and serve hot.

 

Notes

Substitute ground turkey with ground chicken or beef.

Add vegetables like zucchini or mushrooms for more variety.

Add red pepper flakes or jalapeño for a spicy version.

Serve over brown rice, quinoa, or cauliflower rice.
