These Vegan Berry Crumble Bars are the perfect combination of juicy berries and a crispy oat crumble topping. Made with almond or oat flour and coconut oil, they’re naturally sweetened and customizable to fit your dietary needs!
Ingredients
1 ½ cups rolled oats (gluten-free if desired)
1 ¼ cups almond flour or oat flour
½ cup coconut sugar or brown sugar
½ teaspoon baking powder
½ teaspoon ground cinnamon
Pinch of salt
¾ cup coconut oil, melted (divided)
1 cup mixed berries (fresh or thawed frozen: blueberries, raspberries, strawberries)
Instructions
Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
In a large bowl, combine oats, almond or oat flour, coconut sugar, baking powder, cinnamon, and salt.
Stir in ½ cup melted coconut oil until the mixture forms a crumbly texture.
Press about two-thirds of the crumble mixture firmly into the bottom of the prepared pan to form the base.
Evenly layer the mixed berries over the base.
Sprinkle the remaining crumble mixture over the berries as a topping.
Drizzle the remaining ¼ cup melted coconut oil over the top of the crumble.
Bake for 25–30 minutes, until the topping is golden and edges are crisp.
Cool in the pan before cutting into bars.
Notes
Substitute berries with blackberries, cherries, or seasonal fruits.
Add 1 tsp vanilla extract to crumble for extra flavor.
Boost protein with a scoop of plant-based protein powder mixed into dry ingredients.
Swap coconut oil with olive oil, avocado oil, or vegan butter as preferred.
