Description
This Weight Watchers lemon yogurt cake is a light and refreshing treat made with non-fat Greek yogurt and a zesty lemon flavor. Perfect for a low-fat, guilt-free dessert or snack!
Ingredients
1 ½ cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
Zest of 1 lemon
1 cup plain non-fat Greek yogurt
Sweetener to taste (Stevia, sugar substitute, or light sugar)
Optional: powdered sugar or light glaze for topping
Instructions
Preheat oven to 350°F (175°C). Grease or line a 9-inch round cake pan with parchment.
In a bowl, whisk together flour, baking powder, baking soda, salt, and lemon zest.
In another bowl, mix yogurt and sweetener until smooth.
Gradually mix dry ingredients into wet, just until combined.
Pour batter into prepared pan and smooth the top.
Bake for 25–30 minutes, until a toothpick comes out clean.
Cool in pan for 10 minutes, then transfer to a wire rack.
Serve plain or with a dusting of powdered sugar or glaze.
Notes
Add berries for a fruity twist.
Drizzle with lemon glaze for added sweetness.
A teaspoon of vanilla can enhance the flavor.
