Description

This creamy whipped feta dip topped with cranberries, toasted walnuts, honey, and thyme is a 15-minute holiday appetizer that’s full of Mediterranean flavor and festive flair.


Ingredients

For the Whipped Feta Base:

8 oz high-quality feta cheese (block style, Greek preferred)

4 oz cream cheese, softened

3 tablespoons extra virgin olive oil (reserve 1 tbsp for finishing)

2 tablespoons fresh lemon juice

1 clove garlic, finely minced

1/4 teaspoon freshly cracked black pepper

For the Toppings:

1/2 cup dried cranberries (or fresh, chopped)

1/2 cup toasted walnuts, roughly chopped

2 tablespoons honey

1 tablespoon fresh thyme leaves

Zest of 1/2 lemon


Instructions

Prepare ingredients: Let all ingredients come to room temperature. Pat feta dry to remove excess brine.

Whip the base: In a food processor, blend feta, cream cheese, 2 tbsp olive oil, lemon juice, and garlic for 2–3 minutes until light and smooth. Scrape down sides halfway through.

Season: Add black pepper and pulse briefly. Taste and adjust lemon or olive oil if needed.

Assemble: Spoon whipped feta into a serving dish and swirl with the back of a spoon.

Top: Sprinkle with cranberries, walnuts, thyme, lemon zest, and drizzle honey and remaining olive oil over the top.

Serve immediately or refrigerate for up to 30 minutes before serving to let flavors meld.
